Winter Salad With A Cranberry Citrus Dressing

Serves 8

INGREDIENTS

DRESSING

½ cup Ocean Spray Fresh Cranberry’s

½  cup fresh or frozen raspberries (Trader Joes)

1 fresh orange peeled cut into 4ths

½   cup balsamic reduction (El Romanella I get from Smart & Final 16.9 oz bottle)

¼   apple cider vinegar

½ cup Extra Virgin Olive oil

2 tablespoons of orange marmalade

Salt & Pepper to taste

 

METHOD

1.     Put all ingredients in blender and blend well. I like it to have a little texture to it so I do not blend all the way

2.     Once made it can be store for up to a week

SALAD

2 heads romaine

2 oranges peeled and segmented

½ cup candied spiced pecans (Trader Joes)

1 cup of julienne jicama

½ cup pomegranate jewels (you can do yourself or buy at most stores when in season)

METHOD

1.     Wash romaine and pat dry and cut into 1” pieces

2.     Peel and segment the 2 oranges

3.     Julian you jicama

4.     Take your lettuce, jicama ¼ cup of your pomegranate jewels and toss with 1 cup of dressing

5.     Then take your orange segments and take the dressing that is left and drizzle and toss      lightly not to break up the segments

6.     Toss pecans in with the greens and plate

7.     Place oranges on salad

8.     The take the rest of the pomegranate jewels and garnish
